If you liked my earlier post on yoghurt ice cream, here's another recipe with berries. If you're a berry lover, or a big kid like me, you must try this!
Recipe:
Plain yoghurt (2 cups)
Honey/sugar (to taste)
Blueberry (handful)
Strawberry (4-5)
I grabbed lemon but didn't use it in the end.
I liked mine with bits of berries, so I smashed some in a bowl while the rest went into the food processor. You might add some sugar here as Malaysian imported berries tend to be on the sour end. If your fruits are sweet enough, you can reduce quantity of sugar in this step.
Half blended, half mashed. If you like yours smooth, throw everything into blender & mix evenly with your yoghurt. Depending on how much berries you use, but my recipe yielded about 6-7 servings.
As for your yoghurt, whisk it with sugar to taste. While the honey sunk to bottom of bowl mixture, my ice cream had tang & sweet at different parts..haha I wanted my mixture to have different color and texture, so you need not mix the berry and yoghurt thoroughly. While filling, make sure each mould has some bits of berries. Leave batter in freezer for at least 6 hours.
This is how much I made with my recipe. (Overnight)
Soft & Creamy (After 6 hours)
If you want it soft and creamy, serve after 5-6 hours. And if you prefer ice frozen, chill overnight. So simple, so easy & no machine required. Hope you try it. :)
